This Reisling is the Most Delightful Mouthful


Joh. Jos. Christoffel Erben Erdener Treppchen Reisling Kabinett. Such a delightful mouthful.

I enjoyed this wine for the first time dining at Uchi Proper’s sushi counter. Per the usual, my friend and I allowed our chefs to call the shots, opting for omakase. After a sake cocktail on the patio, we were ready for a nice bottle of white with our dinner. I pointed out a Reisling I was unfamiliar with and decided to be adventurous. What a grand decision that turned out to be.

Our sushi girl made our chefs keen to what we were drinking and the pairings were spot on. Sakana Mushi, Karaage, grilled shisitos with Uchi-racha. With every bite my mouth felt a fire only the Reisling could extinguish. It was sweet and spicy heaven. We could have easily continued with the wine through the rest of the meal. If only the bottle would have lasted that long.

Recently, our beverage director Chris Melton was asked to pair some of Austin hottest salsas entered in the annual Austin Chronicle Hot Sauce Festival with a beverage of his choice. It was no shocker to me when I read his selection was the Christoffel Erben Reisling. Another stand out pairing came from Paul Ozbirn of parkside. He chose to pair a chipotle-curry salsa with Blue Owl’s Professor Black Cherry Stout. I will definitely be testing out that flavor combo soon.
