With nearly 25 years of experience in the food and beverage, hotel, and hospitality industries, John Baydale brings tremendous depth of knowledge and operational expertise to Uchi. In his role as President, John oversees all aspects of the day-to-day operations of all the restaurants, as well as any future ventures for the company. His duties include: managing and reviewing financial performance, inventory and cost controls, forecasting, purveyor relations, menu development, wine and beverage development, guest service delivery standards, human resources, employee training, in-service education, and the hiring and supervision of key personnel including unit general managers, managers, and chefs. John also plays a key role in developing the long range strategic plan, as well as shaping the marketing and public relations strategies for the company. Prior to joining Hai in January 2010, he held the position of Chief Operating Officer of Choice Hospitality Group based in Los Angeles. Before joining Choice, Baydale was Vice President of Operations for WB Stage 16 Restaurant at the Venetian Hotel in Las Vegas, as well as another Stage 16 project in Chicago. He played a major role in developing the restaurant concept, in addition to overseeing day-to-day operations. Favorite local restaurant: Clark’s Oyster Bar.
