Cristian Canencio

Sous Chef

Born in Bogota, Colombia, Cristian moved to NYC on a Soccer Scholarship when he was 16 years old. Starting without a declared major he quickly decided to pursue the culinary arts which he says ignited his true passion and was able to cook with products that he had never worked with let alone seen.

After finishing college, Cristian moved to NYC where he gained most of his chef training working for Michelin star restaurants such as Corton, Gotham Bar and Grill, Marc Forgione, Dovetail and Nix.

Cristian’s last position was as Executive Chef of Grand Army Bar Brooklyn before heading making his way to Austin to work at Uchiko, where he truly found a passion for Japanese cuisine.
